Ingredients
- 2 salmon fillets (about 6 oz each)
- 1 bunch asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (freshly squeezed)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and pepper to taste
- Lemon wedges (for serving)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
Step 2: Prepare the Vegetables
- Place the asparagus and cherry tomatoes on the prepared baking sheet.
- Drizzle with 1 tablespoon of olive oil and season with half of the minced garlic, salt, and pepper. Toss to coat evenly.
Step 3: Season the Salmon
- In a small bowl, mix together the remaining olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
- Place the salmon fillets on the baking sheet, skin-side down (if applicable), between the vegetables.
- Brush or spoon the oil and seasoning mixture evenly over the salmon fillets.
Step 4: Bake
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
Step 5: Serve
Serve the baked salmon with lemon wedges on the side for added freshness.
Tips
- For extra flavor, sprinkle a bit of grated Parmesan cheese over the asparagus before baking.
- If you prefer crispier asparagus, broil for the last 1-2 minutes of baking.
