'Pullet eggs' or 'Starter eggs',  are the very first eggs laid by young hens within the first 30 to 60 days of starting to lay. These eggs are smaller in size and account for only about 10% of a farm’s total egg production, making them rare and therefore more valuable.

Despite their size, pullet eggs have larger yolk-to-white ratios, offering a richer, more concentrated flavor that’s highly prized by professional chefs. British celebrity chef Jamie Oliver once publicly stated, “Pullet eggs are the best eggs you can buy.”

Nutritionally, pullet eggs are higher in protein and lecithin compared to regular eggs. Lecithin helps regenerate liver cells, promote brain development, and enhance memory, making these eggs especially beneficial for children, postpartum mothers, patients, and the elderly.

Due to their smaller size, the best way to enjoy pullet eggs while preserving their nutritional value is by boiling them gently in water.
